Replace
  Fresh compressed yeast    1000g
By
  Fermipan® (*)   300-400g

Replace
  Active dry yeast    1000g
By
  Fermipan® (*)   500-600g

N.B. The indicated figures are merely intended as guidelines. Exact figures cannot be given, since there are variations in quality between other brands of yeast. (*) When using Fermipan® instead of fresh compressed yeast, extra water, about twice the weight of Fermipan® used, can also be added to the dough.

Keepability

When stored cool and dry Fermipan® instant dry yeast is keepable for 24 months. Once you have opened the vacuum pack it can be kept in the refridgerator for another 6 weeks without loosing gassing power.
